Semi-dried tomatoes (makes 1 kg)
1kg roma tomatoes, halved
1/2 cup Minos extra virgin olive oil
freshly ground black pepper
1. Arrange tomatoes cut-side up on a baking tray.
2. Drizzle each tomatoe half with Minos olive oil. Sprinkle with sea salt and pepper.
3. Bake in a very slow oven (130 degrees C) for one hour.
Serve warm or cold on crusty bread, in salads or as a meal accompaniment.
Store in an airtight container, covered with Minos olive oil.
Note - Reserve the oil used to cook the tomatoes.
Use it to store the tomatoes or make a delicious dressing.
